Special Issue Introduction

In recent years, lactic acid bacteria (LAB), as an important part of the gut microbiota, produces a variety of metabolites, including organic acids, amino acids, extracellular polysaccharides and vitamins, etc. Current research mainly focuses on the role of probiotics in gut microbiota and host health. there remains a gap in understanding the various mechanisms through which LAB can regulate gut microbiota, beyond the few well-known pathways. Additionally, few studies have identified the decisive components that play key roles in LAB, such as its surface compounds or metabolites. Also, whether there are synergistic or antagonistic effects among functional components needs to be studied further in order to better expand the application scope of LAB.

We welcome manuscripts describing original research, including but not limited to:

1. Mechanisms of lactic acid bacteria in regulating gut microbiota;

2. Determination of functional components of lactic acid bacteria and their interaction;

3. Broadening of the application of lactic acid bacteria;

etc.
